Ultimate Roast Potatoes

 



Preparation Time: 10 minutes

Cook Time: 1 hour 30 minutes

Serves: 6 servings

There's nothing like the magic of a humble spud turned into golden, crispy and perfect roast potato. Classically for roasts, they really go with anything... and made even better with Snowflake Flour or Semolina! Try them... soon!

Ingredients

1kg Everyday Potatoes

1  Tbsp Snowflake Semolina OR Snowflake Cake Wheat Flour

8  Tbsp fat or oil of your choice

1  Tbsp Salt

Method

  • Peel potatoes and chop into egg-sized chunks. Boil in salted water until the outside is done, then drain.
  • Heat the oven to 220C.
  • Add fat or oil to a roasting tray, big enough to put the potatoes in a single layer. Fat should be 0,5cm in the bottom of the tray.
  • Put the tray in the oven to heat up – it must be very hot. Shake potatoes to roughen the edges, mix the semolina or flour with a tablespoon of salt and and sprinkle over.
  • Tip into the hot fat or oil – it should sizzle – and turn until coated on all sides.
  • Roast for 20minutes, then turn and roast for 20 minutes more, until crisp and golden.
  • Optionally add whole garlic cloves and rosemary sprigs to the tray for the last 15 minutes of cooking and mix to ad more flavour.
